My husband and my mother in-law loves to eat fresh vegetables. Me, when I am still in the Philippines I admit that I eat vegetables very seldom. But when I came here in Italy, that's the time that I appreciated eating fresh vegetables. One of the recipes that I learned here is making vegetables and shrimp salad.
Here are the ingredients:
1 matured mango
1 red chilli without seeds
8 small onions
1 small cicely
450 g. of shrimp (cooked and shelled)
200 g of green leafy vegetables
juice and lemon rind of 1 green lemon
2,5 cl of olive oil
1 pinch sugar
1. Peel the mango and cut it in a very thin slice. Cut the chilli in large stripe. Peel the small onions and the cicely.
2. Mix these ingredients together with the shrimps. Distribute the leaves of the green leafy vegetables in the plates. Garnish with the mixed ingredients of shrimps, vegetables and mango. Add salt and pepper.
3. In one bowl, mix the juice and the lemon rind, olive oil and sugar. Pour a little of this seasoning in the salad. Decorate it with cicely. Then serve with the remaining seasoning.
