Now,I decided to visit my blogs and I found out that some of my blogs page rank are N/A. Maybe because my I changed my domain into blogspot. Since my private domain expired and I decided not to continue paying it. My problem right now is, what will I do to check the page rank status of this blog? Could anyone help me?

It's summer once again. It's the season wherein we are wearing shorts, sleeveless shirts etc. It's also the season wherein we are going to the beach or to take a vacation in other places. In terms of foods, it's the time that we have to eat more fruits and vegetables. In the Philippines, if it's summer, it's the time that we are preparing halo halo to feel fresh.

If you want to make halo halo this summer, here are the ingredients:

1 ripe large banana
2 ripe mangoes or 1 cup canned ripe mango
1 cup firm gelatin set into gel and cut into 1/2 inch cubes
1 cup canned ripe jackfruit
1/2 cup sweet corn or chick peas (garbanzos)
i cup young shredded coconut, fresh or canned
1 cup cooked sweet yams or (ube halaya) glutinous purple yam, cut into 1 inch cubes
2 cup shaved ice
2 cup milk
4 scoops of favorite ice cream
1/2 cup chopped peanuts or rice krispies

Instructions:

1. Peel the mangoes and slice it into 1/2 inch cubes. Discard the seeds.
2. Prepare 4 tall glasses. Divide each ingredients into 4 equal parts.
3. In each glass place 1/4 of each ingredients, adding layer by layer starting with corn or chick peas, cooked sweet yams, jackfruit, bananas, coconut and gelatin.
4. Top with 1/2 cup shaved ice.
5. Pour 1/4 cup milk over shaved ice and top with a scoop of ice cream.
6. Sprinkle nuts or rice krispies over it.

* If you want, you can add sugar.

Yesterday, since I've been in Fabriano I wasn't able to prepare our dinner. That's the reason why, my mother in-law decided to cut into thin slices the carrots that we have in the refrigerator. Spaghetti With Brandy

Sometimes, if I'm busy doing some tasks, I prefer to cook something that does'nt need much effort. Usually, the one that I'm cooking is the Gratin di Patate.

Here are ingredients:

900 grams of potatoes
coarse salt
50 grams of butter plus 30 grams for the baking pan
2 tbsp. of olive oil
450 grams of onionsin thin slice
1 cloves of garlic (flattened)
fine salt
pepper
30 cl. of chicken broth
rosemary for garnishing

Directions:
1. Peel the potatoes and wash. Cook for 10 minutes in boiling water with salt. Drain, make it cold, then cut into circle. Preheat the oven at 200°C.
2. Heat the butter in the olive oil (in medium fire). Put the onions and dry up for 5 minutes. Combined the garlic, salt and pepper.
3. Grease the baking pan. Put the potatoes and the onions in layer, start and end with potatoes. Sprinkle with chicken broth and butter in pieces.
4. Cover with aluminium and bake into oven for 80 minutes. Remove the aluminium and put the potatoes under the grill. Garnish with rosemary and serve immediately.

My husband loves to prepare and make bread using our home bread maker. In fact, when he arrived from work, he still had a time preparing it. He is making a bread 3 times a week with 2 different kinds. I even told him to teach me how to prepare, so that I will be the one to do it, but until now he is not yet teaching me. Here are the ingredients:

120 gr. of milk 530 gr. of white flour
3 eggs 50 gr. of fruit candied (orange or citron)
210 gr. of butter 150 gr. of raisins
1 tsp. of salt brewer's yeast
90 gr. of sugar

Directions:

Put first the milk, followed by eggs, then butter (in small pieces), salt, sugar, flour and yeast, raisins and fruit candied. Wait for 2:40 hours of rising and 1:10 hours of cooking.

If my husband is making a lasagna, he prepares the besciamella. Of course, there are besciamella available in the market but he prefers to do it. And here are the ingredients that he is using in making besciamella.

60 gr. butter
50 gr. sifted flour
Half spoonful of chopped onion fine
1 / 2 liters of boiled hot milk
5 gr. salt
A pepper and nutmeg
1 bunch of thyme and laurel

Directions:

Cook the onion in the butter without browning it. Add the flour and stir for few seconds. Then, add the milk, salt, pepper, thyme, nutmeg and laurel. Make it boil and steam it for 15 minutes. Continue stirring. Drain at the end.

My Father In-Law's Situation

My father in-law is a bed ridden for more than one year already. I could say that, his situation is not easy, being in the bed almost everyday. As a matter of fact, last March 2008, our family doctor told to my mother in-law to prepare herself because anytime God will going to get him. But it didn't happened. Maybe, it's not yet his time. Anyway, no one really knows when is the proper time to join our Almighty God.

Since, my father in-law became a bed ridden, he has a lot of tubes connecting to his body. He is eating through tube and he is using a catheter. Every M-W-F, there is a nurse who is visiting my father in-law's health. Twice a month, my father in-law also is having a blood test.

Vegetables and Shrimp Salad

My husband and my mother in-law loves to eat fresh vegetables. Me, when I am still in the Philippines I admit that I eat vegetables very seldom. But when I came here in Italy, that's the time that I appreciated eating fresh vegetables. One of the recipes that I learned here is making vegetables and shrimp salad.

Here are the ingredients:

1 matured mango
1 red chilli without seeds
8 small onions
1 small cicely
450 g. of shrimp (cooked and shelled)
200 g of green leafy vegetables
salt, pepper
juice and lemon rind of 1 green lemon
2,5 cl of olive oil
1 pinch sugar

Directions:
1. Peel the mango and cut it in a very thin slice. Cut the chilli in large stripe. Peel the small onions and the cicely.
2. Mix these ingredients together with the shrimps. Distribute the leaves of the green leafy vegetables in the plates. Garnish with the mixed ingredients of shrimps, vegetables and mango. Add salt and pepper.
3. In one bowl, mix the juice and the lemon rind, olive oil and sugar. Pour a little of this seasoning in the salad. Decorate it with cicely. Then serve with the remaining seasoning.

Lasagne With Walnuts

Lasagna is generally believed to have originated in Italy. It is one of the most common food not only here in Italy but also in other countries.

Everytime my husband is not busy he is always preparing different kinds of lasagna. And one of the lasagna that he likes to prepare is this one.

Here's the ingredients:

1 mozzarella (kind of Italian cheese originally made from buffalo's milk)
100 g of emmental cheese
200 g of asiago ( type of cheese)
300 g of pasta for lasagne
40 g of butter
300 ml of bechamel/ white sauce
50 ml of walnuts sauce
40 g of shelled walnuts (grind)
50 g of grated parmigiano cheese

Directions:

1. Put in the mixer the mozzarella, emmental cheese and asiago. Grind roughly. Dip the pasta in boiled salted water. Then strain and laid it in a clean cloth.
2. Grease the oven proof dish, make one layer of pasta, distribute top of it a little bechamel/white sauce and walnut sauce, also one handful of cheese, of grind walnuts and parmigiano.
3. Continue doing it in the same manner until the ingredients will be finished. End it with the pasta, bechamel, walnut sauce, grind walnut, parmigiano and butter in flakes. Bake in the oven at 200°C for 20 minutes. Serve immediately.

Stuffed Milkfish ( Rellenong Bangus)

Yesterday, my husband went to the supermarket when he finished working and he bought a fish which looks like bangus (milkfish). I told my husband that I will going to prepare a Filipino recipe called Rellenong Bangus, using the fish that he bought. And he agreed.

And here are the ingredients:

1 big bangus (milkfish)
3 cloves of garlic, minced
1 onion chopped
2 tomatoes, diced
1 egg
1/4 cup lemon juice
1 small carrot, finely chopped
1/4 cup soy sauce
4 tablespoons of cooking oil
ham, finely chopped
raisins
cooked peas
salt and pepper to taste

Directions:
1. Scale and remove the intestines of the fish.
2. With a very sharp knife, slowly remove the meat of the fish from the skin through the opening cavity below the head. Remove the spine by snapping off the bone at the base of the tail and head. Use a long spoon to scrape all the meat from the skin.
3. Marinate the head and skin in lemon juice, soy sauce and pepper.
4. Boil in 1/2 cup of water the fish meat with some salt for 5 minutes.
5. Saute the garlic and onions until slightly brown then add the tomatoes and carrots until tender.
6. Add the chopped ham, cooked peas, raisins and the fish meat to the mixture. Cook for an additional 5 minutes. Salt and pepper to taste.
7. Add a beaten egg to the saute and mix well.
8. Stuff the mixture inside the bangus skin and head. Sew the cavity if needed.
9. Fry in oil until golden brown.
10. Slice slightly diagonal (1 1/2 inch thick) and serve.

Anyway, bangus or milkfish is the Philippines national fish. It is wide spread throughout the islands of the Philippines but the most tasty ones comes from Dagupan, Pangasinan ( northern part of Luzon, Philippines ).

At first, I asked myself why she preferred using butter. But when my husband tried to use butter in frying eggs, I tried to taste it and I could say that the taste is good. Rice With Shrimps And Mushrooms

Here in Italy, if they are cooking rice they usually fry it. They use mostly olive oil in frying or sometimes frying the rice alone. They are frying the rice because it makes it separated from each other.

And here is one of the recipes wherein they are frying or toasting the rice.

Ingredients:

6 tbsp. of olive oil
320 g of rice
1 dl of white wine
800 ml of vegegetable broth
300 g. of mixed mushrooms
20 shrimps (without head)
1 shallot
1 bunch of parsley

Directions:

1. Heat 4 tbsp. of olive oil in a saucepan and toast the rice for a couple of minutes. Steam the wine into the rice then continue cooking it adding the warmed vegetable broth a little at a time.
2. Clean the mushrooms and cut it into slices. Shelled the shrimps. Chop the shallot and fried it in the remaining oil.
3. Add the mushrooms, cook it for 5 minutes or until the color is brown, then put the shrimps, some are whole, some are in pieces. Cook for another 2 minutes.
4. Before 2 minutes of cooking the rice, add to it the mushrooms and the shrimps. Outside the fire, garnished it with finely chopped parsley. Then serve immediately.

Purea di Patate ( Mashed Potatoes)

Last New Year, my husband prepared Purea di Patate together with lenticchie and cotechino. Lentichhie is one of the family of legumes. While Cotechino is like a sausage. It is a gut of pig whose interior consists of a mixture of lean pork, bacon, rind, spices and herbs.

And all of these three foods, are very easy to cooked. So to start with, I will going to give you the recipe on how my husband prepared the Purea di Patate. Try and it's delicious.

Ingredients:

1 kg. potatoes
125 gr. butter
1 glass of milk
a pinch of salt and pepper
10 gr. salt

1. Peel, wash and cut potatoes into small pieces.
2. Put them in a pot and cover with cold water. Add 10 gr. of salt and cook it.
3. Once the potatoes becomes soft (but not too much), remove from the water and drain.
4. Then put them in a bowl, mashed the potatoes with a wooden spoon until it becomes elastic.
5. Add small pieces of butter and season with salt and a pinch of pepper. Stir, then add the milk.
6. Put again the mashed potatoes into the fire (low heat) and continue to mix .
7. When just starts boiling, remove from the fire. Then, it's ready to serve.

One of my favorites are chocolates. And since my husband bought a dark chocolates, I decided to try making this chocolate cookies. Here are the ingredients.

150g butter
150g of flour
150 grams of ground hazelnuts
2 tablespoons cocoa
150 g sugar
100 grams of dark chocolate

1. Cut butter into pieces and let it soften slightly . Work it with flour, hazelnuts, cocoa and sugar in order to obtain a firm dough.

I like shrimp very much. And as a matter of fact, I like cooking it in a very easy way. And one of the recipes that I'm doing everytime my husband bought a shrimp is the shrimp fritters.

Here are the ingredients:

500 g shrimp
3 eggs
flour q.b.
olive oil
salt

1. Wash and shelled shrimps.
2. In a bowl, batter the 2 whole eggs plus 1 egg yolk. Then add the flour until you get a mixture of medium density. Add salt and the remaining egg white (mounted on the snow).
3. In a pan, bring to boil the olive oil then if it's already hot put the shrimp. Then put 2 tablespoons of the mixture, entire the shrimp.
4. Cook the shrimp on both sides. And if the color is golden, remove it from the fire and dry it well and serve.

Banana Nut Bread

Since we have a lot of bananas, I decided to bake a Banana Nut Bread. And I decided to follow the recipe of Manang Lisa about her Brown Sugar Banana Nut Bread. But since we have no walnuts or pecans I decided to put peanuts instead. And I can say that Manang Lisa's recipe was really good. And if you want, you can try this one.

Ingredients: (that I used)

1/2 cup butter, softened
1 cup brown sugar
2 cups all-purpose flour
3 tsp baking powder
2 eggs
3 small pack of vanilla extract
4 riped bananas, mashed
1/4 tsp salt
1/2 cup chopped peanuts

Directions:

1. Preheat oven 170 degrees (in a ventilated oven). Lightly grease the pan.
2. In a large bowl, cream together the butter & sugar until light and fluffy. Stir in the eggs one at a time. Beat well. Stir in vanilla and banana.
3. In a separate bowl, blend the flour,baking powder and salt.
4. Then blend the banana mixture into the flour mixture. Stir just to combine. Fold in peanuts. Pour into prepared pan.
5. Baked for 1 hour.

Mixed Fruit Shake

Right now, I want to share with you how to make a good fruit shake. So, if you want to make your own fruit shake during summer, just follow this ingredients.

Good for 4 people

600g of mixed fruit in season
2 lemons
150 g sugar
1 small glass of whiskey
crushed ice q.b.

1. Washed and peeled fruit you have chosen depending on the season.
2. Squeeze lemons obtains the juice into a cup.

Tinolang Baboy o Sinigang na Baboy

Since we have a sinigang mix which I bought when I went to Rome, I decided to cook Tinolang Baboy. Well, it's my first time to cook it. And I'm happy because the outcome was good.

Ingredients:

meat
3 carrots
3 potatoes
9 leaves of chinese cabbage
Sinigang mix
onion
garlic
salt

Instructions:
1. Wash carrots, potatoes, cabbage and meat. Cut them into small pieces also the onions.
2. Put water in the pan together with the meat,onions and garlic. Add a little salt in it.
3. Be sure that the meat is a little cooked and put the carrots,followed by potatoes and cabbage.
( If you want you can add also a knorr cubes to enhance the taste of it.)
4. Then 10 minutes before you will going to turn off the heat, put the sinigang mix.
5. Serve with rice.

Apple Pie

My husband bought one box of apples last week. That's why I decided to try baking an Apple Pie. And I prepared it together with my mother in-law.

And here's the ingredients:

Good for 4 persons:

1kg of yellow apples
2 eggs
100g of flour
100 g sugar
100 g of amaretti (crumble)
100 g of butter or margarine
1 tablespoon milk
1 / 2 sachet of yeast cake

1. Peel apples and cut into small pieces. Add dissolved butter or margarine and all the other ingredients except the amaretti.
2. Put the mixture in a rectangular low pan, and spread evenly over the surface the amaretti crumbs.
3. Put in the oven, preheated to 200 ° C, and leave for 1 hour.
4. Cool for about 10 minutes before serving.
